Kelly's Korner is having Show Us Your Life Appetizer Friday. This recipe came from my mom-in-law. These day, my 17 year-old son is the guac expert around our house!
2-3 avocados they should be soft, but not mushy
Container sour cream
1 tomato diced
1 small onion finely chopped
1 lemon - a couple squeezes of juice (to taste)
Grated cheddar cheese
Salt and pepper
Peel avocados, scrape avocado from seed and put in a big bowl. Use a potato masher to mash up. Add sour cream, chopped onion, diced tomato, lemon juice, salt and pepper and stir it to mix. Mix in some grated cheese. Cover with a layer of cheese. Serve with tortilla chips.
Note: we rinse the seed and put it into the avocado mixture because we were told it will keep the guac from turning brown. Not sure if that is really true, or if we are just gullible.
